Pumpkin Pie Vanilla Protein Smoothie

As soon as Autumn hits and the leaves start falling, I seem to find myself craving warm and comforting meals and all things containing cinnamon and spices! One of the most popular drinks for this time of year is the pumpkin spice latte, which you can usually find at lots of popular coffee shop chains. 

Pumpkin is such a versatile vegetable and can be added to salads, roasted, made into soup, used in baking and yes even added into a smoothie! This recipe is the perfect thing to get you into that Autumnal spirit, as well as including some fruits, veggies fibre and health fats into a dish at the same time! 

 

The banana and pumpkin combo help to create a really smooth, creamy consistency and also a delicious natural sweet flavour (from the banana). This also includes one of my favourite ingredients, cashew nut butter, which makes the smoothie even more creamy, as well as being a source of plant-based protein and healthy fats! You could take this with you for a speedy, seasonal breakfast on the go or have it as a snack to perk you up and it will only take a matter of minutes to whizz everything together!

Here's how to make it for yourself.... 

Pumpkin Pie Vanilla Protein Smoothie

Ingredients

1 cup cashew / coconut mils 
1 banana 
1 tbsp cashew nut butter
1 scoop Madagascan Vanilla PERFORM
3 heaped tbsp pumpkin puree (make your own by roasting pumpkin and blending it until smooth) 
1/2 tsp organic cinnamon powder 
1/3 tsp ginger powder 
Pinch of nutmeg 

Optional: coconut cream, to serve. 

Method: 

Add all of the above ingredients into your blender and blend until smooth. Add a little coconut cream on top for extra indulgence!
